Seared Diver Sea Scallops
Served with grapefruit & pink peppercorn salsa
Ingredients
3 ea. U-10 Diver Sea Scallops
1 small Grapefruit cut into segments
1/2 tsp. pink peppercorn
1/2 tsp. chopped cilantro
1 tbs. thinly cut green onions or scallions
1 oz. diced or julienne bermuda onions
Procedures
Mix all of the above ingredients except the scallops, so that
the flavors blend
Season scallops with salt & freshly ground white pepper
on both sides
Coat the bottom of a pan lightly with vegetable oil
Let the oil smoke, place the scallops in the pan until done
on both sides
Arrange scallops on your favorite plate and place the grapefruit
salsa on top
Garnish with diced tomatoes & cilantro oil Buen Provecho!
Chef's Note: This dish was originally prepared with Jamaican Scotch Bonnet peppers. I used Jalapeno peppers to make the heat of the dish more tolerable. If you wish to make the dish the original way, please be careful. The Scotch Bonnet (Habenero in Mexico) is 100 times hotter than the Jalapeno. After cutting them, please do not touch your eyes (or anything else) until you have washed your hands very carefully.
